No More Blueberries

Blueberries?! I can always go for blueberries. Alone, on ice cream, in pancakes, by the handfull. That song from Oliver, "Food, glorious food," could be sung about blueberries in my life. However, sometimes you want a muffin that is not [gasp] blueberry.
Here is a great recipe that I found for Orange Juice Muffins. I started making them one weekend when Mark and I both got colds. We hunkered down with tissues and blankets, played cards and boardgames and spent the weekend drinking lots of fluids. We needed a healthy "snack" and these orange juice muffins did the trick.
Here is the recipe:
- Pre-heat Oven to 400

Mix following in a medium bowl. Whisk.
1 1/2 c. all purpose flour
1/2 c. whole wheat flour
(sometimes I reverse these flour measurements and it still works well)
1/2 c. sugar
2 tsp. baking powder
3/4 tsp. salt
1 tsp. cinnamon

In a separate bowl:
1 c. orange juice (I use low sugar)
1/2 c. vegtable oil
1 egg
lemon rind (about half a lemon or so)
- Mix well. Add to the dry mixture. Whisk until moist.
- Add 1-2 c. golden raisins
- Coat muffin pan with spay or use muffin cups. Pour mixture into pan. Sprinkle a bit of sugar on top of each muffin. Bake for 20 minutes.

Enjoy your blueberry-free muffins!
