CSA Inspired Recipe: Potato and Spring Pea Salad

Peas start like this...

Need more incentive to eat your peas?
Then try this recipe:
Ingredients:
•2 lb small red potatoes
•2 tablespoons white-wine vinegar
•1 tablespoon minced shallot
•1 teaspoon salt
•1/2 teaspoon black pepper
•3 tablespoons extra-virgin olive oil
•1 cup freshly shelled baby peas (the recipe called for frozen, but we are kicking it up a notch!)
•1/3 cup chopped or torn fresh mint leaves


Directions:
  1. Cover potatoes with cold salted water in a 3-quart saucepan, then simmer, covered, until tender, 10 to 15 minutes.
  2. While potatoes are cooking, whisk together vinegar, shallot, salt, and pepper in a large serving bowl.
  3. Drain potatoes and halve or quarter if desired. Add to vinegar mixture while warm and toss to coat.
  4. Add oil, peas, and mint and toss to combine.
  5. Season with salt and pepper and serve warm or at room temperature.

Spring Cleaning: Lingering Items


I never actually finished my spring cleaning. There are a few items that are lingering that I just cannot figure out what to do with. See, the problem is I am a bit emotionally attached to the remaining items. I need stern direction. Please help!

1. Leftover Wedding Invitations: I have enough to hold another small wedding! Say 35 or so. What do I do with them? Keep them as mementos? Keep a few and trash the rest? What do I do with the few I keep? I already have one complete set of every paper item from our wedding in a box of wedding memories...


2. Old CookingLight Magazines: I love cooking light. Their magazines are great, but I typically grab my recipes online, from my delicious account, or make them up in my head. What should I do with these magazines? Does anybody want them?

3. Pens: If you knew me in college you would understand my obsession with Sharpie markers. Well...lets just say that the obsession has grown and I could outfit a small office with enough supplies for several years. But I don't want to give them up! They are all organizes and stowed away...but taking up space nonetheless. It is a catch 22 for me.

4. Glass Vases: At a quick count I have 18 of all shapes and sizes (plus 4 pitchers and 3 ice buckets which also occasionally hold flowers as well as 8 glass carboys just for decoration). The problem: I don't get flowers all that often, and Mark usually gets me flowers that come in their own vase!

So there you have it. I am stuck. Any creative suggestions would be greatly appreciated!

2010 Reading List: April and May


Many people have raved about this book, telling friends that you won’t be able to put it down. It is true. I loved it. Confession: I took a cab home on a beautiful day so I could get there faster to read the ending!

Closing the cover for the final time, I desperately wanted to read Kathryn Stockett’s next book. What an incredible novel to start a literary career! This book and Stockett’s obvious passion while writing it will bring you through all of your deepest emotions: elation, anger, frustration, relief, satisfaction, pride and joy. Skeeter and Aibileen become dear friends to the reader. The children in this story steal your heart. And some folk, who will remain nameless, make you want to scream and stomp and smack across the face! Be prepared to cry. This one is a joyfilled tear-jerker. If you haven't yet, go get it now! If you have read it, what did you think?



And some other books I read and would recommend. The Guardian was unlike many of Nicholas Spark's other novels. He calls it a murder mystery, but loyal fans, have no fear, there is still a deep love story. Sophie Kinsella is the author I turn to when I need a mind freeing read. Her books are quick reads and make me laugh. Twenties Girl fit the bill! A Praying Life is fantastic. I would recommend it to everyone! I am actually still in the midst of reading this one since it helps to slow down and apply the nuggets of wisdom to your life and prayer as you go along... The 4-Hour Work Week makes me cringe. I waste too much time. But the book has inspired efficiency and provided a longing for a lifestyle that I hope to cultivate. Finally, Food Rules, another great from Michael Pollan. He hits you over the head with those obvious statments that should guide are eatting habits, but are too easily forgotten.

And, I cannot wait to share with you the exciting books I am reading this month!

Also, I am taking suggestions for books to bring on my beach vacation at the end of July. Any ideas?
